Taco soup is the perfect warming dish for those cold days. The soup is hearty and filled with AMAZING flavors. Browned ground beef and onions are mixed with pinto beans, kidney beans, corn, diced tomatoes, and diced green chilies; and topped with ranch and taco seasoning packets to provide an INCREDIBLE flavor!

This soup is one of those meals I CRAVE when the weather starts to cool off. There is nothing like having a hot bowl of soup to warm you up on those cold days, especially with the DELICIOUS irresistible taste of taco soup! I love how simple this soup is to make by just pouring in the cans and seasoning packets into a Dutch oven and then putting on a simmer until ready to serve. It’s super easy to prepare and very TASTY!

How to Make the Best Taco Soup

To make this soup, start by browning the ground beef and onions in a Dutch oven until fully cooked and the ground beef is no longer pink, and then drain off any remaining grease.

Next, stir in the pinto beans, kidney beans, corn, tomatoes, green chilies, taco seasoning, ranch dressing mix, and water. Bring to a boil, reduce heat, and simmer uncovered for 15 minutes. Ingredients can also be placed in a crockpot to cook for 6-8 hours if you want it cooking while you are at work.

If you like your soup with a little more broth, you can add additional water as desired before cooking.

Serve with toppings as desired such as sour cream, cheese, green onions, avocado, cilantro, or crumbled tortilla chips.

What to Serve with Taco Soup

This dish is pretty hearty and can be served all on its own. Tostitos Scoops go really well with this soup, either crumbled on top or to scoop out the soup like dip.

  • 1 lb ground beef
  • 1/2 cup diced onions
  • 1 15 oz can pinto beans
  • 1 15 oz can light kidney beans
  • 1 15 oz can whole kernel corn (drained)
  • 1 28 oz can diced tomatoes
  • 1 4 oz can diced green chilies
  • 1 pkg taco seasoning mix
  • 1 pkg ranch dressing mix
  • 2 cups water
  1. Brown ground beef and onions in a Dutch oven and drain.

  2. Stir in the beans, corn, tomatoes, green chilies, taco seasoning, ranch dressing mix, and water. Bring to a boil, reduce heat, and simmer uncovered for 15 minutes.

  3. Serve with toppings as desired (sour cream, cheese, green onions, avocado)
