This recipe for pralines is absolutely DELICIOUS with the roasted pecans and chewy caramel. So much sweetness in each bite that it will be hard to share!

What are Pralines

If you have never had a praline, you need to try these! So what exactly is a praline? A praline is a cookie that contains roasted nuts such as pecans and has a caramel sweet taste with a creamy, fudgy texture. It is like a melt-in-your mouth candy with a little bit of crunch, so YUMMY!

Pralines are a great idea to make for a holiday cookie exchange. They are a different consistency than your standard cookie and taste more like candy with roasted pecans but in the shape of a cookie.

I made this recipe for pralines for my last cookie exchange, and they were a huge hit! Several people told me that their cookies did not make it home to share with family or friends as they decided to have them all to themselves. These are also great to fill your Christmas cookie tins with to have out at your holiday parties. They will go quick, so be aware!

How to Make Pralines

Start by preheating the oven to 350°F.

Bake pecans in a single layer on a cookie sheet for 8-10 minutes stirring half way through cooking time. Cool completely.

In a large saucepan over medium heat, bring brown sugar, salt, baking soda, whipping cream, and butter, stirring occasionally until mixture registers 236°F on a candy thermometer.

Next, remove the pan from heat and let sit until the thermometer reaches 150°F (~20-25 min).

After the thermometer reaches 150°F, stir in vanilla and pecans, stirring constantly for 1-2 minutes until it starts to lose its gloss.

Drop by tablespoon quickly onto some wax paper while mixture is still warm. Let sit until firm and enjoy.

  • 2 cups pecans (halves and pieces)
  • 3 cups brown sugar (packed)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup whipping cream
  • 1/4 cup butter
  • 1 tsp vanilla
  1. Preheat oven to 350°.

  2. Bake pecans in a single layer on a cookie sheet for 8-10 minutes stirring half way through cooking time. Cool completely.

  3. In a large saucepan over medium heat, bring brown sugar, salt, baking soda, whipping cream, and butter, stirring occasionally until mixture registers 236° on a candy thermometer.
