Garlic Roasted Potatoes
Petite gold potatoes are roasted in melted butter and minced garlic. The coarse texture of sea salt provides for the most AMAZING salty flavor and the melted butter helps seal in the taste and texture of the sea salt. Finally, these baby gold potatoes are brought to a perfect crispness allowing for a tender inside and a crispy skin on the outside. Lastly, the roasted potatoes are sprinkled with parsley for an additional added flavor and appearance. These are melt-in-your-mouth GOODNESS. Wait until you taste these, so DELICIOUS!
I grew up in a family that absolutely loved potatoes. In fact I recall having some type of potato for our meals almost on a daily basis. These roasted potatoes are one of my all time favorite potato side dishes. The salty, garlic-butter flavor and the crispy skins give these the most INCREDIBLE taste. Even my kids love these YUMMY potatoes!
These roasted potatoes are also amazingly easy to make with minimal ingredients. This is one of those recipes that I just crave every once in awhile. It is one of the BEST side dishes you will ever try. It also pairs well with most cooked meats such as chicken, steak, or pork chops.

How to Make Garlic Roasted Potatoes in a Dutch Oven
In a Dutch oven, melt a stick of butter over medium heat. Add garlic and cook for another 1 minute until slightly fragrant.
Next, add the potatoes, stir to coat, and generously sprinkle with seat salt. Keep in mind that potatoes usually need a little more salt due to their starchy consistency. The salt will quickly be absorbed, so I give them a little extra. Next, place the lid back on the Dutch oven, reduce the heat to medium-low and cook for about 20 minutes until tender, stirring occasionally. You can check to see if they are done by inserting a sharp knife into the potatoes to ensure tenderness.
Just right before you are ready to serve, you will crisp up the potatoes. They should first be nice and tender, before you start to get the crispy texture. For this step, you will need to keep a close eye on the potatoes and stir them to ensure they don’t burn. First, remove the lid and turn the heat up to medium-high. Finally, cook for another 5 minutes until slightly crispy, stirring occasionally.
Sprinkle with parsley and serve immediately.

What are the Best Potatoes for Roasted Potatoes?
When choosing potatoes for roasting, you want to have a good starchy potato. Starchy potatoes will give the crisp texture on the outside when roasted. Both Russets and Yukon gold potatoes are high in starch. The high starch also allows the potatoes to cook quicker. However, you also want to consider how waxy the potato is as this will help the potato hold its shape. The Yukon gold potatoes have a mid-level waxy consistency that will help to maintain the shape while cooking but still allowing for the tender inside.
Red potatoes are more waxy so will hold their shape well, but will take longer to cook. The Yukon gold potatoes have the best combination of starchy and waxy, but the primary reason they should be used for roasting potatoes is their creamy, buttery taste. This makes for the perfect roasted potatoes.

- 1/2 cup butter
- 1 tsp minced garlic
- 1.5 lbs petite gold potatoes (washed and halved)
- 2 tsp sea salt
- 1 tsp parsley

Add the potatoes, stir to coat, and generously sprinkle with seat salt. Place lid on Dutch oven, reduce heat and cook for about 20 minutes until tender, stirring occasionally.
Remove the lid, turn the heat up to medium-high, and cook for another 5 minutes until slightly crispy, stirring occasionally.
Sprinkle with parsley and serve immediately.
