You can never have enough variations for Taco Tuesdays, so this easy beef taco salad is the perfect addition. Instead of using a taco shell, this recipe is served over salty tortilla chips and topped with FLAVORFUL taco meat, black beans, crisp lettuce, grape tomatoes, shredded cheddar cheese, and sour cream. This meal will soon be added to your family’s meal plan on a regular basis, it is so DELICIOUS and simple to make!

This is one of those meals that can be put together in almost no time at all, and still tastes so good! I just love how easy it is, and most of these are common ingredients that we usually have on hand. So next time you are at a loss for what to make for dinner, whip this one together real quick, and your family will LOVE it!

How to Make Easy Beef Taco Salad

In a large skillet, brown ground beef at a medium-high heat and drain off any excess grease. Stir in taco seasoning packet or make your own taco seasoning, and water and cook for about 5 minutes until most of the liquid has evaporated. Next, stir in black beans and cook for another 2-3 minutes until the beans are warmed through but not overcooked.

To prepare the salad, place crumbled tortilla chips on the bottom of a large salad bowl. Next, add the shredded lettuce and taco meat and bean mixture. Finally, top with the tomatoes, shredded cheese, sour cream, and salsa if desired. Toss the salad with salad tongs to mix and enjoy!

Note: If you have picky eaters in your dinner crew like I do, you can layer and mix the salad into individuals bowls with desired toppings to customize for each person.

Taco Mixture Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 15 oz can black beans

Salad Ingredients

  • 3 cups tortilla chips (crushed)
  • 1 head iceberg lettuce (chopped)
  • 3/4 cup grape tomatoes (halved)
  • 1 1/2 cups shredded cheddar cheese
  • 3/4 cup sour cream
  • 3/4 cup salsa ((optional))

Taco Meat Mixture:

  1. In a large skillet, brown ground beef at a medium-high heat. Stir in taco seasoning and water and cook for about 5 minutes until most of the liquid has evaporated.

  2. Stir in black beans and cook for another 2-3 minutes.

Salad Preparation:

  1. In a large bowl, put crumbled tortilla chips on bottom.

  2. Add torn lettuce and taco meat mixture.

  3. Top with tomatoes, shredded cheese, sour cream, and salsa if desired.

  4. Toss the salad to mix and enjoy!
