How to Make Chicken and Broccoli Stir Fry

In a large skillet or wok heat 1 tablespoon of olive oil over medium high heat. Add chicken pieces and season with salt and pepper. Cook 5-6 minutes until cooked through. Remove chicken from skillet.

Next, add remaining 1 tablespoon of olive oil to skillet or wok and reduce heat to medium.

Stir in broccoli, peppers, and carrots and sprinkle with total seasoning and cook until slightly tender for about 5 minutes. Add in the garlic and ginger and cook for an additional minute. Stir the chicken back in with the vegetables.

In a small bowl, whisk together cornstarch, water, chicken broth, soy sauce, and honey. Pour the sauce over chicken stir fry and mix together.

Finally, bring to a boil and allow to boil for about 1 minute, stirring occasionally.

Serve over rice or lo mein.

How to Make for a Freezer Meal

To Prep:

  1. Cook the chicken as indicated above.
  2. Whisk sauce together as indicated above.
  3. In a large freezer bag, pour in chicken, vegetables, total seasoning, garlic, ginger, and sauce.

To Cook:

  1. Thaw in refrigerator
  2. In a large skillet or wok heat 1 tablespoon of olive oil over medium high heat.
  3. Pour contents into skillet and cook until vegetables are slightly tender, about 10 minutes.
  4. Serve over rice or lo mein.

Storage: Store in freezer for up to 6 months.

For this recipe, I used broccoli, bell peppers, and carrots. You can add whatever types of vegetables you like. Some other common vegetables to try with stir fry include snow peas, mushrooms, green beans, baby corn, or water chestnuts.

  • 1 lb boneless, skinless chicken breasts (cut into 1 inch cubes)
  • 2 Tbsp olive oil (divided)
  • salt & pepper (to taste)

Stir Fry:

  • 2 cups broccoli (chopped)
  • 1/2 red bell pepper (diced)
  • 1/2 yellow bell pepper (diced)
  • 1/2 cup baby carrots (chopped)
  • 1 Tbsp total seasoning
  • 2 tsp minced garlic
  • 2 tsp minced ginger

Sauce:

  • 1 Tbsp cornstarch

  • 1/4 cup chicken broth
  • 3 Tbsp soy sauce
  • 1/4 cup honey
