Chocolate Chip Protein Muffins are an easy breakfast food that will satisfy that sweet craving. These are great to make when you have day-old bananas. They will help keep those food cravings away since they are filled with Kodiak Flapjack and Waffle mix as a source of protein. The whole family will love these and will feel good about eating them!

This is one of my go-to recipes that I make when I have old bananas that I don’t want to throw out. The recipe works bests with softer bananas as you will need to be able to mash them easily.
I also love that these contain the Kodiak Flapjack and Waffle mix as this is a great source of protein that can be easily incorporated into a breakfast meal or even grabbed as a snack throughout the day. Eating enough protein helps us to stay full longer and stops some of those cravings, another reason why I love these!
As much as I love making these for myself to have an easy breakfast ready throughout the week, my family loves them equally as much. I often find that they are gone fairly quickly, and I should have made more! These chocolate chip muffins are easy for a grab and go breakfast and are also nice to have for a mid-day snack.
The chocolate chips are just enough to satisfy that sweet tooth without feeling guilty about over indulging. So overall these are the perfect combination of the ingredients I am looking for!
How to Make Chocolate Chip Protein Muffins
To start you will need to have some over-ripe bananas that are extra-soft. Next, mash the bananas in a medium size mixing bowl. Now, mix in the eggs, honey, vanilla, and Kodiak Flapjack & Waffle Mix.
Next, stir in the chocolate chips into the mixing bowl.
Pour mixture into a greased muffin pan filling each one about 3/4 full.
Bake at 350 degrees for about 12-15 minutes.
Allow to cool and enjoy!

Make these healthy chocolate chip muffins that are packed with protein using leftover bananas. Never throw away those bananas again. They are perfect for this recipe!
- 2 bananas (mashed)
- 2 eggs
- 1/2 c honey
- 1 tsp vanilla
- 2 c Kodiak flapjack and waffle mix
- 1 c chocolate chips
Preheat oven to 350 degrees.
Combine the mashed bananas, eggs, honey, vanilla, and Kodiak flapjack & waffle mix into a bowl.
Stir in the chocolate chips into the mixed ingredients.
Pour mixture into a greased muffin pan filling each one about 3/4 full.
Bake at 350 degrees for about 12-15 minutes.
