Avocado toast is a healthy alternative for a nutritious breakfast using a ripe avocado layered on a piece of whole wheat toast. The mashed avocado is mixed with lime juice and a touch of salt for added flavor. The avocado toast is then sprinkled with parmesan cheese to enhance the flavor. The avocado toast is completed by placing an over-easy egg on the top if desired. Avocadoes are a super food, so they are very good for you and also contain protein and healthy fat. Super foods enhance our metabolism to ensure calories are frequently being burned. Also, the protein with the added egg will help you stay full longer and help to avoid those unnecessary cravings.
How to Make
To make avocado toast, start by pitting the avocado and scooping the fruit into a bowl. One tool that makes cutting and slicing an avocado super easy is this avocado slicer. Get one if you don’t already have one! Next mash the avocado, lime juice, and salt together in a mixing bowl until only small chunks remain. Toast some whole wheat bread in a toaster and spread the avocado mixture evenly over the top of the bread. Next, sprinkle each piece of avocado toast with shredded parmesan cheese. At this point, you can either eat the avocado toast as is or add an egg over the top. I love adding a fresh egg cooked over-easy over the top of my avocado toast. If you prefer your egg more cooked, you could certainly cook it longer to your desire. The eggs on the top will give you the added protein to start out your day. Now it’s ready to serve and enjoy! Serve with a piece of fruit, such as a banana.
How to Tell if Avocado is Ripe
In order for your avocado toast to turn out with the right consistency, you will want to ensure the avocado is ripe. Ripe avocadoes have a small window of time from when they are ready to when they are past ripe and no longer good to eat. So how can you tell if an avocado is perfectly ripe to use in your recipes? There are a couple of ways to help you choose the perfect avocado.
Color: Your first clue for a ripe one is the color of the avocado. If it is still green, then it is not quite ripe. If you slice into a green one, you will find that it is hard and impossible to mash. The ripe ones will be a purplish-black color. This is the perfect one for your recipe! An overly-ripe avocado will be black. You will likely be disappointed if you slice into a black one, and it probably won’t taste good.
Texture: When you pick up the avocado, give it a gentle squeeze to determine the texture. If the avocado is very hard with no give, it is not quite ripe and ready to use. A ripe avocado will be slightly soft yet still retains it shape. An overly ripe avocado will feel mushy and likely will not retain its shape when squeezed. Stay away from these!
Stem: Another clue will be to take a look just under the stem of the avocado. For one that is not ripe yet, you likely won’t be able to pull the stem up at all. A ripe avocado will have a green stem, and an overly ripe one will be brown. The brown one is a good indication of what the inside might also look like.

- 1 avocado (ripe)
- 2 slices whole wheat bread (toasted)
- 1 tsp lime juice
- 1/8 tsp salt
- 1/4 c parmesan cheese (shredded)
- 2 eggs ((optional))
Slice avocado and mash in a shallow bowl until slightly chunky.
Sprinkle with salt to taste.
Spread avocado evenly over slices of toast.
Sprinkle each with parmesan cheese.
If desired, top with an over easy egg.
